As Choctaw and Thai native chefs, we want to honor our ancestors by highlighting ancient techniques and indigenous foods.

From the colonization era to the present, food has been largely dominated by European techniques and approach, leaving lots of native wisdom by the wayside. Ours is a journey of exploration, but also of the reverse colonialization of food.

We invite you to join us as archeological excavators and discoverers of our food, as we embark on indigenous journeys, starting with our own roots.

By revisiting the origin of ingredients and ancient preparation techniques, we aim to reimagine approaches to food that have become all but standardized. Indigenous methods that have long been replaced by colonial ingenuity will resurface as expressions of truly experimental and progressive cuisine.
